Punjabi Chola Bhatura
Chole Bhatura is a Punjabi meal recipe. Chole is made up of Chickepeas which is cooked in a thick spicy curry while bhatura is made up of Maida which is fermented by adding curd and thus the bhatura is fluffy and soft like bread.
Kabuli chana (chickpea) – 1 cup (soaked in water overnight
Tomatoes – 2-3
Green chilli – 2-3 pieces (sliced)
Ginger paste – 1 tablespoon
Coriander powder – 1 tablespoon
Dry pomegranate powder – 1 tablespoon
Hing ( asafoetida) – 1 pinch
Cumin powder – ½ tablespoon
Garam masala- ½ tablespoon
Red chilli powder – ½ tablespoon
Salt – 1 tablespoon
Mustard oil – 4 tablespoon
Maida – 1 cup
Sooji – 4 tablespoon
Curd – 3 tablespoon
Salt – ¼ tablespoon
Sugar – ¼ tablespoon
To make chole first pressure cook with two tea bags it for upto 5 whistle or until it is tender. Drain the excess water and discard the tea bag.
Heat oil in a karahi and add hing, chopped tomatoes and green chilli. Fry for few seconds. The add coriander powder, cumin powder, ginger paste, pomegranate powder, red chilli powder and garam masala and fry till the masala leaves oil.
Now add boiled chole, salt and required amount of water and let it simmer for 2 mintues. Your chole is ready.
For Bhatura take maida in a large bowl. Add sooji, curd, salt and sugar. Mix well. Now add required amount of water and make dough. You need to really knead it well. Wrap it in a wet muslin cloth for at least an hour.
Before serving make small balls out of dough and roll out puri. Heat oil in a karahi and fry the puri on high flame. Serve hot with chole.
