The Royal Pilaf / Nawabi Pulao

Rumpa Sanpui's Secret Indian Recipe !

Paneer : 200gms
Gobindo bhog Rice (or any aromatic rice) : 2 cups (soaked in water and dried for one hour)
Ghee – 3 tablespoon
Refine Oil - 2 tablespoon
Cloves, Green cardamom, Black cardamom - 1 each crushed
Cinnamon, Nutmeg, Javitri - 1/2 inch piece
Ginger -Garlic - Onion paste: 5 tsp
Finely chopped Onion : 1 cup.
Bayleaf - 2
Salt to taste.
Sugar : 1 ½ tbsp.
Warm Milk 1 cup
Red Dry chilli: 3-4
Red chilli powder: 2 tblspn
Lemon juice: 2tspn
Shah Jeera powder: 1tspn
Black pepper powder: 1tspn
Tomato ketchup: 1tblspn
Cashew nuts - 10
Marinate the paneer with ginger-garlic-onion paste, red chilli powder, 1tspn lemon juice and salt for 30mins
Heat oil and ghee in a pan put the marinated paneer and fry till golden brown. Keep it aside.
Now add some more ghee to the pan. Add chopped onion and fry till it becomes transparent. Pour the remaining marinated masala to the onion and cook till oil separates. Add tomato ketchup and the fried paneer. Sauté for 1-2 mins and turn off the flame
Rinse rice in water for 2-3 times and then soak them in water for 15 minutes. Drain water and keep rice aside.
Heat ghee in a non-stick HANDI. Add bay leaf, dry red chilli, cloves, green cardamom, black cardamom, nutmeg powder, javitri and cinnamon stick. Sauté for 30 secs. Add cashew nuts. sauté for another 30 seconds.
Add soaked and drained rice.
Sauté for 1¬-2 minutes
Add 3 cup water, and 1cup warm milk. Mix well and bring it to boil over medium flame
When it starts to boil, reduce flame to low and cook covered for 8-10 minutes or until rice is fully cooked. Do not open the lid or stir in between. When rice is cooked, turn off flame and let it stand for 5-7 minutes. Open the lid and fluff the rice with a fork
Now add paneer, shah jeera powder, black pepper power, sal.t and sugar to the rice.
Mix gently and cook for 2-3 minutes. Turn off the flame and transfer it to serving bowl.
