Sabj Dilbahar (mixed Vegetable With Dry Masala)
Sabj dilbahar is a mix vegetable side dish recipe which is cooked along with whole masalas. It is one of the easiest recipes that has lot of vegetable fibre and is cooked with minimum oil.
French beans – 50 grams (cut in small pieces)
Carrot – 50 grams (cut in small pieces)
Cauliflower – 50 grams (cut in small florets)
Green pea – 25 grams
Capsicum – 1 piece (sliced)
Tomato – 1 piece ( sliced)
Onion – 1 piece (sliced)
Green chilli – 2 pieces (chopped)
Ginger garlic – 1 tablespoon (finely chopped)
Whole cumin – ½ tablespoon.
Fennel seeds – 1/2 tablespoon
Coriander powder – ½ tablespoon
Turmeric powder – ½ tablespoon
Red chilli powder – ½ tablespoon
Roasted fenugreek powder – ½ tablespoon
Salt – 1 tablespoon
Mustard oil – 1 tablespoon
Green coriander leaves – 2 tablespoon (chopped)
Heat oil in a karahi and put cumin seeds, ginger, garlic and green chillies.
Sauté for a second and then add sliced onions and tomatoes. Sauté for a mintue till the onion become soft.
Add coriander powder, turmeric powder, red chilli powder and roasted fenugreek powder. Fry for few more seconds and then add all the vegetables and salt and mix well
Cook on low heat till the vegetables turn tender. Garnish with Green coraiander and serve hot with chappati.
