Sabziwali Paneer (cottage Cheese With Vegetables)
Sabziwali paneer is a side dish recipe which involves goodness of paneer as well as vegetables like carrot and capsicum. This dish is a brilliant example of pefect blend of flavors, sweet, savory with a dash of spice
Paneer (Cottage cheese) 200 grams (7 ounce cut in 1 inch square)
Kaju (cashew paste) 100 grams (3.2 ounce)
Capsicum 1 piece 100 grams (chopped)
Carrot 50 grams ( 2 ounce, chopped)
Onion paste 1 onion, 50 grams (2 ounce)
Ginger garlic paste 2 tablespoon
Kasuri methi (fenugreek leaves) 1 tablespoon
Green chillies 2-3 halved
Salt 1 tablespoon
Sugar ½ tablespoon
Refined oil 5 tablespoon
Turmeric Powder 1/4th tsp
Red Chili Powder 1/4th Tsp
Garam Masala powder 1/2 tsp
First put a pan or kadhai on the gas stove and pour the refined oil. Once oil is heated add the paneer and sauté for 1-2 mintue. Take it out and keep separately.
In the remaining oil add onion paste followed by ginger garlic paste and sauté for 1-2 mintues. Add Turmeric powder, red chili powder and mix well
Then add cashew paste ,capsicum, carrot, green chillies, kasuri methi and salt to taste (about 1/4th tsp), add a little less than ½ cup of water and cover the karahi with a lid.
Cook on low flame for 10 mintues. Check if the carrot and capsicum have become tender.
Add sugar (opt) and paneer mix well and cook for 5 mintues on low heat. Finally add garam masala mix well and turn off the heat.
Sabziwali paneer is ready. Serve it with Chappati or Paratha
Cashewnut paste and onion paste will make the masala slightly sweeter, so you may skip adding additional sugar completely or adjust the quantity according to your taste
