Seemebadnekai / chayote squash – 500 Gms
Mustard seeds - 1 tablespoon
Urad dal - 1 tablespoon
Channa dal – 1 tablespoon
Green Chillies - 3 chopped into small pieces
Refined oil - 2 tablespoon
Fresh grated coconut – 3 tablespoon
Salt according to taste
Lemon juice – ½ tablespoon
Wash and Peel the skin of Seemebadnekai /chayote squash and remove the seed inside and cut into ½ inch cubes.
In a broad pan heat oil.
When oil is hot,add mustard seeds when it starts spluttering add urad dal &channa dal.
Fry till the dal turns golden brown.
Add green chillies & fry for 10secs
Add chopped Seemebadnekai / chayote squash.
cover with a lid and cook till the veggie is soft.
Please make sure it is not overcooked.
Add salt to taste and add Lemon Juice.
Finally add grated coconut and Serve with Chapati or mix with rice.
Please do not add more water while cooking the vegetable.
