Semiya Kesari (vermicelli Kesari)

When we hear the word 'Kesari' the first thing that comes to all your minds is Rava Kesari. I have already shared the mouth-watering recipe of Rava Kesari to you. Semiya Kesari is another type of kesari, which is prepared using Vermicelli. This recipe is quick to make and needs very little ghee and sugar compared to other kesari recipes. This can be served as a yummy dessert for this festive season

Ingredients: 
Vermicelli- 1 cup
Sugar- 1/2 cup
Water- 1 and 1/2 cups
Yellow food colour- a pinch
Ghee- 3 tbsp
Cashew nuts- 10 pieces
Cardamom powder- 1/4 tsp
Directions: 
Mix sugar with 1 and 1/2 cups of water and a pinch of food colour. Boil it until the sugar gets dissolved completely and keep aside.
Heat ghee in a heavy bottom pan and fry the cashew nuts in ghee for few seconds and keep aside
Add the vermicelli to the remaining ghee and fry until vermicelli turns golden in colour.
Next, add the water boiled with sugar and food colour and cook on low flame until the vermicelli gets thick consistency
When it starts leaving the sides of the pan, add cardamom powder and fried cashew nuts and switch off the flame
Serve hot
Footnotes: 
While adding water to the fried vermicelli, stir continuously so that the vermicelli does not form lumps.
This can be refrigerated for 2 days. While serving, just heat it up and drizzle little ghee and serve hot.
Do not add the sugar before the vermicelli gets cooked completely, else the kesari will turn rubbery.
