Shahi Biryani ( White Masala Chicken Biryani)
This is a white masala biryani....my mom makes it but then I added a little twist to it :)
My family enjoyed it and hope your family members will also enjoy it!!
3/4 kg Basmati Rice
1 kg Chicken (preferably boneless but I used with bone coz my father in law doesnt like boneless)
1 packet Amul fresh Cream
8-9 green Chillies ( you can add more if u like it spicy)
Handful of Almonds
2 tbsp Cashewnut paste
1 small bowl of Curd
Small bunch of Pudina
Small bunch of Corriander
Black Pepper powder 1 Teaspoon (again u can add more according to ur taste)
1 tsp Garam masala powder
4 - 5 Onions (medium size) slice it fine and make barrista (fry it till brown) and keep aside
2 laung ( Cloves)
2 green Cardamoms
1 bay leaf
2 inch Cinnamon stick
Small piece of coal to do the dungaar
Chop the green chillies and blanch the almonds and put both together in a mixer along with a little milk n water and make a nice paste.
Now marinate the chicken with the above paste, cashew nut paste , cream, curds, salt, pepper, coriander and pudina and keep it overnite if you have to make it in the morning or else 2 - 3 hours also is fine.
Take a big vessel ..pour oil and once hot put in the whole spices and once they start to splutter put in the marinated chicken and cook.
Add half of the barrista (fried onions) and cook.
Once the chicken is done and the masala is ready..keep aside. Put a piece of coal on fire when it is hot put it on the foil paper..pour a lil ghee on it. Place the foil in the vessel containing chicken n close the lid of the vessel..and keep it closed for 5 - 10 mins ..
Par boil the basmati rice and strain it..
Now remove the coal and the foil paper from the masala. In a wide pan put a layer of rice and decorate it with fried cashews and onions, pour the layer of chicken and put the rest of the rice and decorate again with fried cashews and onions and a tsp of ghee around it ...close the lid and put it on dum ( put a aluminium plate over the flame n put the biryani dish ) for 20 - 25 mins ...
Once you see the smoke coming out and you know its done...voila your Biryani is ready :) Serve HOT with raita ...enjoy!!!
