Shahi Dry Fruit Pulao

It is a simple vegetarian maincourse recipe and a good option for surprise guests. The ingredients required are usually available at home and it just takes 15 mintues to prepare.

 Shahi dry fruit pulao
Rice – 1 cups
Onion – 1 piece (sliced)
Cinnamon – 1 inch
Cardamom – 3-4 pieces
Cloves – 5 pieces
Raisins – 2 tablespoon
Cashew – 2 tablespoon
Ghee – 2 tablespoon
Refined oil – 2 tablespoon
Salt – 1 tablespoon
Grated carrot and paneer – 2 tablespoon (for garnishing)
Wash and soak the rice in water and keep it aside.
Heat oil and fry the onions till they turn light brown. Take out it a plate and keep aside.
In the remaining oil add Cinamon, cardamom and cloves and sauté for few seconds, add cashew, raisins, ghee and rice and mix well. Add salt, onion and 3 and ½ cups of water and cook it in pressure cooker upto 1 whistle. Let it cool and then garnish with grated carrot and paneer and serve hot.
