Shahi Gajar Tukda ( Carrot Fudge)

Ingredients: 
For Covering:
Grated Carrots - 500 grams
Sugar 4-5 Tbsp
Maida flour 1/4 cup
For Sugar Syrup:
Suagr 4 Tbsp
Water - 1 Tbsp boiled together for 3 min
For Khoya Filling ( As per taste)
Khoya / Condensed Milk
Almonds slices
Saffron strands
Pistachio slices
Silver Leaves for garnishing
Directions: 
Heat carrot and sugar together in a pan for 2-3 mintues.
Then add Maida and mix carefully. Switch off the gas.
Knead into a smooth dough. Make thin layers out of the dough and bake for 5-10 mintues at 180 degree temperature.
Cut into small squares and keep aside.
Mix the ingredients for filling in a bowl and make the sugar syrup as mentioned.
Take a small square sheet of carrots. Dip into sugar syrup and keep on a plate. Spread some filling on it and place another small carrot square on top. Garnish with silver leaves and serve hot or cold.
