Shahi Gulab Poli

Shahi Gulab Poli is a one type of Puran Poli which is traditionally made in Gujarat.The word "Shahi" expresses the "Royalty" and the inclusion of dryfruits in this recipe fully justifies that title. Along with it, smell & taste of rose (Gulab) in the form of Gulkand adds to the charm of this sweet dish.

For the Dough:
Maida(all purpose flour) - 1 cup
Oil - 3 tbsp
Milk - 1/4 cup
Water -as required
For the Filling:
Gulkand - 100 gram
Walnut - 50 gram
Cashewnut - 50 gram
Almond - 50 gram
Cardamom - 1 tbsp
Other ingredients :
Whole wheat flour for rolling
Ghee for smearing
For the dough: Combine the flour, milk & oil in a bowl and knead into a soft dough using enough water. Divide the Dough into 5 equal portions and keep aside.
For the stuffing: First make the powder of Cashewnut, walnut, Cardamom and Almond with the help of mixer -grinder. Now mix it with Gulkand and mix well. Then divide it into 5 equal portions and keep aside.
Method: (1) Roll out one portion of the Dough into a 100 mm (4") diameter circle using a little whole wheat flour for rolling.
(2) Place a portion of the filling in the center and fold the edges of the Dough over the filling .Pinch the edges together to seal the filling.
(3) Flatten the Dough and roll again in to a 100 mm (4") diameter circle, using a little whole wheat flour for rolling.
(4) Cook on a Tava (griddle) over a medium flame, till it turns golden brown in colour from both the sides.
(5) Repeat with the remaining Dough and Filling to make 4 more Shahi Gulab Poli.
(6) Smear a little Ghee on each Sahi Gulab Poli and serve hot.
It is very nutritious for all age groups. Easy to cook. Gulkand helps to reduce acidity and stomach heat and used as a cooling tonic. Walnut improves bone health, prevent coronary diseses and improves metabolism. Cashewnuts are rich in vitamins and minerals and work as a antioxidant. Almonds maintain skin health, prevents heart disease and support healthy brain function.
