South Indian Rava Upma (semolina Upma)

It is nutritious tasty and very easy to make at home. It is one of my favourite recipe. Few days back one of my friend Anjana sent me this recipe. I forgot to try this for long time. When i was checking my mails few days back, i saw this recipe and thought of giving it a try immediately. I prepared this and came out well.

Ingredients: 
Rava - (Semolina) 1 cup
Water -2 cups
Onion -1
Green chilli-3
Red chilli dry - 2 pieces
Curry leaf - few
Urad dal (Black gram dal) -1tsp
Coconut oil -4 spoon
Salt -to taste
Ginger- 1 inch piece ( finely chopped)
Coconut oil-1 spoon
Mustard-1/2 tsp
Salt -1 tsp
Directions: 
First dry roast rava for 2 to 3 minutes. Keep it aside.
Heat coconut oil in a pan add mustard seeds, when it splutters add urad dal. When it turns light brown add dry red chilli, curry leaf, chopped onions, ginger, green chilli and sauté for 2 minutes.
Sauté until onions turns transparent.
Add 2 cups of normal water and salt.
When the water starts boiling, reduce the flame to low, add rava gradually with one hand and keep stirring with other hand.
Once rava absorbs all water cover and cook on a low flame for 6 to 7 minutes. Don't forget to stir in between. Remove from the fire and keep lid closed for 2 minutes.
Delicious Rava Upma is ready to be served.
Footnotes: 
Remember to keep stirring the Rava in each step otherwise it will get stuck at the bottom.
