Soya Bean Ka Keema /veg Keema (minced Soya Bean Cooked In Spices)

Full of protein and flavor. I always prepare this dish for my vegetarian friends. This dish fits in well with other North Indian dishes and goes well with both rice and breads.

Ingredients: 
500 Gms Soya Granules
2 Onions finely chopped
1 Large Tomato finely chopped
1 Tbsp Ginger & Garlic Paste
2 Tbsp Mutton/Chicken Keema masala (or chicken curry Masala)
1 Tbsp Kasturi Methi
1 Tbsp chopped coriander
1 tsp red chili powder
2 Badi Elaichi (Black Cardamoms)
Oil for cooking
Water to soak soybeans
Salt to taste
3/4 Cup water
Pinch of sugar
Directions: 
Soak Soy granules in hot water for 20 minutes. Drain, squeeze the water using your hands and set aside
In pressure cooker heat 2 Tbsp oil, add badi elaichi saute. Add in onions and a pinch of salt and cook till slightly pink
Add in tomatoes and cook till onions and tomatoes form a thick mix
Add in the ginger garlic paste followed by the masalas (Keema or curry masala, red chili powder) Saute for a minute
Add kasturi methi, salt to taste and pinch of sugar and soy granules. Stir and add 3/4 cup of water. Pressure cook till one whistle on a medium flame. Turn off heat
After 10 -15 minutes open the cooker lid, if you want a thicker consistency cook uncovered for 10 more minutes on medium flame and let water evaporate. Check for seasoning
Garnish with coriander and serve hot with rice or chapatti.
Footnotes: 
For keema or chicken curry masala I use shaan or MDH
Keema or curry masala may also be prepared by mixing equal portions of coriander and cumin powder and a little garam masala.
