Soyabean Aloo Curry
Soyas are are high in protein content and can be replaced for eggs for vegetarian substitute of protein
Soyabean chunks - 1 bowl
Potato - 1 big (diced)
Tomato - 1 no. - diced in squares
Onion - 1 medium (sliced)
Turmeric - 1/4 tablespoon
Cumin (Jeera) powder - 1 tablespoon
Salt - 1/2 tablespoon
Chilli Powder - 1/4 tablespoon
Mustard Oil - 1 tablespoon
Water - 750 ml
In a deep bottom pan boil 500 ml water. Add 1/4 tablespoon salt. Add the soya chunks and keep it aside.
The soya chunks should soak the water and become soft
In a wok, heat mustard oil. Add onions and saute till the onions become golden brown.
Add the tomatoes and cook. Add turmeric, cumin, chilli powder and salt, mix and let cook till the tomatoes becomes soft and mushy.
Add the potatoes. Mix well. Cook for 5 minutes. Stir in between so that the potatoes do not stick at the bottom.
Now add the 250 ml water and let it boil properly.
Squeeze the soya chunks to remove excess water and add to the wok. Mix properly and let it boil for 5 more minutes.
Add salt and chilli powder as per taste.
Add more water if more soupy consistency is required.
