Soybean Biryani (soybean In Indian Flavoured Rice)

My mother makes the best veg biryani with various vegetables and soybean for that extra punch

Ingredients: 
Basmati Rice - 1 Cup
Onions - 3 Thinly sliced
Carrot - 2 cubed
Jeera- 1 tsp
Red dry chillies - 3
Ginger Garlic paste - 1 heaped tbsp
Star Anis - 2
Black Cardamom - 2
Cloves - 4-5
Coriander - 1/2 bunch chopped
Soybean chunks - 1/2 Cup
Mace - 2
Oil - 5-6 tbsp
Biryani Masala - 2- 3tbsp
Salt to taste
Bay leaf- 2
Water 2 cups
Tomatoes- 2 chopped
Directions: 
Wash and soak basmati rice in water enough water for 1 hr
Soak soya chunks in hot water for 1 hr to get rid of the raw smell and soften them. Squeeze out the water after an hour and keep the chunks aside
In a pressure cooker heat oil
Add all dry whole masalas (Jeeram Mace, Bay Leaf, Black Cardamom, cloves, red dry chillies) and sauté for 1 min
Add onions and carrots and a pinch of salt, stir fry till translucent
Add tomatoes and ginger garlic paste. Sauté for a min more
Now add the biryani masala, sauté till the raw smell of masala goes
Add the soybean chunks and salt to taste, mix well
Cook on high heat for 1-2 mins and add the soaked basmati rice
Mix well but gently and don't break the rice grains
Add water and pressure cook until 2 whistles or till the rice is cooked well
Garnish with coriander
serve hot with curd

I only had carrots while making this today, but usually my mom also adds, beans and capsicum to make it a more healthier option
