Spicy Papad Paratha (papad Stuffed Paratha)

A unique paratha recipe with papad stuffing. I have used fried papad for the stuffing, but if you wish, you can also roast the papads. It’s crispy and spicy taste, increases the flavour of paratha. Papads are made of lentils and thus are free from gluten, rich in protein and dietary fibre.

For the Stuffing:
Small papad - 5 (fried and crushed)
Finally chopped green chillies – 1 piece
Finally chopped coriander - 2 tablespoon
Chat masala - 1/2 teaspoon
Chilli powder - 1/2 teaspoon
Roasted cumin powder - ¼ teaspoon
Salt - 1/4 teaspoon
For the dough:
Wheat flour - 2 cups
Salt - 1/2 teaspoon
Oil - 2 tablespoon
Water for kneading
Refined oil - for frying
Dough: Take the flour (atta) in a bowl; add salt and one tablespoon of oil and mix.
Now add required amount of water and knead into a semi-soft dough and keep aside.
Stuffing: Heat the oil in the pan on high flame, when oil is hot enough, add papad one by one into oil and fry it.
Remove the papad from the oil on napkin paper and crush it.
Take a bowl add crushed papad in it, then add green chilli, fresh coriander, chat masala, cumin powder, chilli powder and salt. Mix well. Stuffing is ready.
Now take small portions of dough and roll it like roti.
Add 2 tablespoon of papad mixture at centre of the roti leaving edges open to seal it into paratha.
Roll the paratha with a rolling pin to make a paratha of medium thickness.
Heat a non-stick tava, place the paratha on it and cook on a medium flame, using little oil till both sides turn light brown in colour.
Yummy and delicious Papad paratha is ready to eat with fresh curd.
