Tamatar Palak (spinach With Tomato)

Tamatar palak is a vegetarian side dish recipe wherein palak is cooked with tomato to kill its bitter taste. This recipe is highly nutritious. Palak is good source of iron, magnesium and calcium wheras tomato has vitamin C. Moreover it has lots of vegetable fibre and requires very little time to cook.

Palak (spinach) – 1 bunch (500 grams)
Tomato – 2 pieces (250 grams)
Hing (asafetida ) – ½ tablespoon
Potato – 2 pieces
Green chilli – 2 pieces
Salt – 1 tablespoon.
Mustard oil – 4 tablespoon
Chop the palak and cut the potato in four pieces.
Heat oil in a karahi and add the hing. Once the aroma starts coming out add the potato. Sauté the potato for 2-3 mintues.
Add the palak, tomato, green chilli and salt and mix well.
Put a lid on and cook on low heat for 10 mintues. Stir occasionally. Check if the potato is done. Increase the flame and cook the palak till the water evaporates. Serve with roti or rice.
People having diabetes can cook it without potato.
