Traditional Kerala Aviyal

Aviyal is a delicious Kerala preparation with mixed vegetables. It occupies an important place in Kerala cuisine and is must in Onam Sadya. Aviyal originates from Kerala but is famous in Tamil too. It is rare with wedding and festival without Aviyal.

Carrot strips- 1/2 cup
Cucumber strips- 1/2 cup
Elephant foot yam strips - 1/2 cup
Green chilli -3
Curry leaves- few
Turmeric powder- 1 tsp
Grated coconut- 2 cup
Chilli powder-2 tsp
Jeera (cumin seeds)- 1 tsp
Coconut oil- 1 tsp
Water- 1/2 cup
Cut all the vegetables into 1/2 inch thickness. Add the cut vegetables into a large vessel.
Top the vegetables with turmeric powder, chilli powder, green chilli and salt.
Pour some water and cook vegetables up to 20 to 30 minutes.
In the mean while grind grated coconut, jeera, onions and green chilli.
When the veggies are 3/4th cooked, add ground paste and mix well.
Cover and cook till the vegetables are cooked completely.
Add yogurt and mix well. Cook for 1-2 minutes more just before removing from the gas, add coconut oil and curry leaves.
Serve hot with rice.
Do not overcook Aviyal as all mix will dry up.
We can add tamarind instead of curd to make Kerala Avial.
