Tri Coloured Idlis
3 cups rice soaked for 6 hours
1 cup urad dal soaked for 6 hours
Salt to taste
1 teaspoon whole dhania seeds
Water as needed to adjust the batter consistency.
For Red-Orange colour:
1 small tomato, deseeded
1 small carrot
For Green colour:
1 cup green Coriander leaves,washed and chopped
For Red orange colour, grind tomato and carrot together and strain very well to get the liquid. Keep aside to add to a part of the idli batter.
For green colour Grind the Coriander leaves and strain to get the liquid. Keep aside to add to a part of the idli batter
Idli Batter Recipe- Wash the rice and dal and soak separately for 6 hours.
Grind them separately. Add the dhania while grinding. Add water to adjust the batter consistency. Keep overnight for fermentation.
Add salt in the next morning and whisk gently.
Divide the batter into 3 parts. Add red liquid to one part and whisk well. Add green liquid to one part and whisk well.
Heat the idli steamer after adding water to it. Grease the idli moulds and put in the idli batter in each.
Steam the idlis for about 15 minutes in the steamer on full flame. Remove when done and demould after 5 minutes.
Serve with sambar and chutney.
