Upwas Ki Poori ( Fluffy Indian Fried Bread Prepared During Fasting)
As the name suggests, it is prepared when fasting. It is made from singhare ka atta ( water chestnut flour) the puris made with this flour turn out very soft
Singhare ka atta ( Chestnut flour) - 1 cup
Boiled Aloo ( potato) - 1 piece
Ajwain ( carom seeds) - 1/4 tablespoon
Sendha namak ( fasting salt ) - 1/4 tablespoon
Oil for frying
Take singhare ka atta in a bowl, add mashed potato and ajwain and mix well.
Add salt and little water and make the dough.
Heat oil in a karahi.
Take portions from the dough , round it and then flatten it by pressing with your palm.
Fry the hand made poori in oil till it turns light brown and fluffs up.
Serve with Vrat ka aloo sabzi
You need very little water to make dough. So be careful.
