Veg Kurma (mixed Vegetable Curry In Malvani Masala)

It is my variation of mixed vegetable curry. The key ingredient to this recipe is the Malvani masala, It is a typical Maharashtrian mix of spices namely Red Bedgi chillies, Sankeshwari chillies, coriander seeds, black peppercorn, cinnamon, cloves, star anise, mace, fennel seeds, poppy seeds, bay leaves, turmeric and asafoetida. Spices are roasted and then grounded to get malvani masala.

Onions - 2 (chopped)
Potato - 1 (cubed)
Tomato -2 ( chopped)
Cauliflower - 1 (small)
Carrot -1 (cubed)
French beans - 250 grams ( cut in small pieces)
Green peas - 250 grams
Coriander leaves – few to garnish
Oil- 6 tablespoons
Malvani masala – 1 teaspoon
Kitchen King Masala – 1 teaspoon
Heat oil in a pan and fry Cauliflower first and then add Potatoes, Carrots and French beans. As they start browning, take them out in a plate.
In the remaining oil, stir fry onions till become brown.
Add tomatoes and cook till they are soft.
Add Green peas, salt to taste, Malvani Masala, Kashmiri chilli powder, turmeric powder, kitchen king Masala and cook further for a mintue.
Then Add all the fried veggies in it. Now put little warm water mix and put lid on.
Cook for 10- 15 min till the veggies are cooked.
Switch off the gas and garnish with fresh chopped coriander.
