Veg Stuffed Paratha

An extremely nutritious breakfast recipe which is easy to cook if you have lots of green vegetables in your refrigerator.

Carrot – 1 small one grated.
Cabbage ½ cup grated.
Onion – small sized, finely sliced.
Raddish – ½ cup grated.
Green chilies – 3-4 chopped.
Red chili powder – a pinch
Salt – to taste
Garam Masala powder – ½ teaspoon
Turmeric powder – ½ teaspoon
Wheat flour – 1 cup
Oil – 3-4 tablespoons
Take all the veggies in a bowl and mix with hand.
Heat 1 tablespoon oil in a pan and add the veggies. Add salt, turmeric powder, Red chili powder and garam masala and cook it covered for 10 mintues. It will release some water and help in cooking the veggies. After 10 mintues increase the flame and cook it till the excess water evaporates. Let it cool.
Make a semi soft dough by adding required water in the wheat flour.
Divide the dough into equal sized balls and then stuff each ball with the vegetable mixture.
Roll out each ball into a round paratha.
Cook the parathas by applying oil on both sides.
Serve with Raita.
