Vegan Coconut Madeleines

Soft and spongy Coconut bites made in coconut milk, dessicated coconut and wheat flour. Some of my friends are vegan and have very little dessert choices to enjoy. This inspired me to create this amazing vegan recipe using dessicated coconut and coconut milk.

Ingredients: 
Wheat flour - 1 1/2 cups
Baking powder - 2 tsp
Dessicated Coconut - 1/2 cup
Brown sugar- 3/4 cup
Coconut milk- 1 cup
Vegetable/Coconut oil - 5 tbsp
Vanilla - 1 tsp
Brown sugar - 2 tbsp for topping
Dessicated coconut - 2 tbsp for topping
2 tsp of oil for greasing cups
Directions: 
In a bowl mix wheat flour, coconut and baking powder.
In another bowl add brown sugar, coconut milk, vanilla and oil. Mix well until incorporated.
Mix dry and wet ingredients gently by folding.
Preheat oven @ 170°C until we prepare topping for Madeleines
Mix 2 tbsp brown sugar and dessicated coconut.
Grease Madeleine cups or muffin cups with oil. Pour 2 tbsp full of batter in prepared cups.
Bake for 15 minutes.
Footnotes: 
Do not overmix batter for spongy and well baked madeleines.
Keep a close watch after 12 minutes as these bake really quick.
