Vegetable Idli Recipe is the perfect Indian breakfast. A nutritional idli mixed with vegetables. Add vegetables of your choice in the batter and serve this healthy breakfast to your family.
Semolina - 1.5 cup
Curd - 1 cup
Chopped vegetables (Carrots, Capsicum, onions) - 2 cups
Ginger garlic chopped or in paste form - 1/2 tsp
Roasted Vermicelli - 1 tbsp
Salt - As per taste
Eno packet - 1
Soak semolina in curd for 15-20 min. Add all vegetables, ginger garlic, vermicelli and salt. Mix well Add water to adjust the consistency. In the last add 1 sachet of eno for instant fermentation.
Grease idli moulds with little oil and prepare the idlis in steamer or microwave. Vegetable idlis are ready. Serve coconut chutney and enjoy a healthy breakfast.
