Vegetable Ishtu (kerala Style Vegetable Stew)

Vegetable Ishtu is a classic side dish served for appam and idiyappam in Kerala. This particular dish is a mix of vegetables cooked in coconut milk and is extremely good in taste. It requires potato as the main ingredient and is very simple to cook. Eventhough this ishtu serves best with appam, I love to have this along with dosa, chappathi or parathas.

Carrot - 1
Onion- 2
Ginger and garlic (chopped into small pieces)- 1 tsp
Green chillies- 6
Thin coconut milk-1 cup
Thick coconut milk- 1 cup
Garam masala powder- 1/2 tsp
Coconut oil- 2 tbsp
Mustard seeds- 1/2 tsp
Dried red chillies- 2
Curry leaves- a bunch
Salt- as needed
Chop the potato, carrot, onion and green chillies into small pieces
Heat 1 tbsp of coconut oil in a pressure cooker and add chopped vegetables into it and sauté until the onion becomes transparent
Add garam masala powder and salt into it and sauté for one minute
Then add thin coconut milk and cook for 3 whistles
When the pressure has been released, open the cooker and add thick coconut oil to it and boil. Remove from fire immediately
Heat 1 tbsp of coconut oil in a pan and add mustard seeds. When the mustard seeds splutter, add dried red chillies and curry leaves and sauté for few seconds
Pour it over the ishtu and serve hot with appam or idiyappam
