Vegetable Macaroni

Macaroni gets an Indian makeover with nutrition and goodness of all the vegetables and spices... A very easy to make recipe for breakfast or evening snacks :)

Macaroni - 100 gm
Onion (medium) - 1/3 (cut in big pieces)
Onion (medium) - 1/3 (finely chopped)
Tomato (medium) - 1 (grated)
Capsicum (chopped in big pieces) - 1/8 cup
French Beans - 1/8 cup
Carrot - chopped in diagonal pieces - 1/8 cup
Corns - boiled - 1/8 cup
Black pepper - 1/8 Tsp
Red chilli powder - 1/3 Tsp
White vinegar - 1/2 Tsp
Ginger garlic paste - 1 Tsp
Salt - to taste
Cooking Oil - 1 Tsp + 1 Tsp + 2 Tbsp
Add macaroni and 1 Tsp oil to boiling water. Strain excess water when done. Wash with tap running water to cool it down.
Add 1 Tsp oil to the boiled macaroni and keep it aside.
In a pan, add chopped onions to 2 Tbsp oil. Add ginger garlic paste. Once onions start turning pink, add carrot and beans.
Add tomato after 30 seconds. After 90 seconds, add onion, red chilli powder and pepper. Cook for a minute. Add corns. Cook for another 30 seconds, add capsicum. Add vinegar and cook for a minute. Add salt and macaroni.
Serve hot and enjoy this wonderful treat :)
