Vegetable Makhanwala (assorted Vegetables In Creamy Gravy)
I absolutely love mixed vegetables. I think it is a great idea to cook different vegetables together to get a wholesome nutrition. Here is one of my favorite way to cook mixed veggies...Hope you will like it.
Green Peas - 1/2 cup
Carrot chopped - 2 medium
French Beans chopped - 4
Green Capsicum chopped - 1 medium
Cauliflower cut into florets - 1/2 medium
Baby Potatoes peeled - 4
Butter - 4 tbsp
Cumin Seeds - 1/2 tsp
Salt to taste
Whole dry red chillies - 2
Red chilly paste - 1/2 tsp
Tomato Ketchup - 1 tbsp
Tomato puree boiled - 1 cup
Fresh Cream - 1/2 cup
Kasoori Methi - 1 tbsp
Cashewnuts - 10
Almonds - 10
Ginger 1 inch piece
Garlic 5-6 cloves
First heat 1/3 cup milk & soak cashews & almonds in hot milk for 30 minutes. While cashews & almonds are soaking, rinse and chop the vegetable.
Heat 1 tablespoon butter and saute the veggies on low heta till they are almost cooked. Take out and keep aside.
Take a grinder or a blender add tomatoes, ginger, garlic, soaked cashews & almonds and make a smooth paste.
Heat 2 tbsp butter in a pan, add cumin seeds and broken red chillies and let them splutter.
Add tomato paste,keep on stirring & sauteing paste till you see fat leaving the sides of the pan.
Add red chilly paste, tomato ketchup, garam masala, salt and mix well.
Add the fried veggies and crushed kasuri methi, stir for a mintue and then add fresh cream. Stir so that cream mixes very well with the gravy.
Switch off the flame. Veg Makhanwala is ready to serve. While serving garnish with coriander leaves & fresh cream.
