Vendai Theeyal - Lady's Finger Dark Roast

This recipe is an excellent side dish for curd rice or lemon rice.
It take very less time to prepare this dish. All you need is tender lady's Finger to get the best taste.
It's a healthy dish as it consumes very less oil and it is said that consuming lady's finger is good for brain.

Vendaikkai theeyal - Lady's Finger Dark roast
Vendai or Lady's Finger - 500 grams
Curd - 10 tbsp.
Chilli powder - 1 tbsp.
Pepper powder - a Pinch
Turmeric powder - 1/4 tsp.
Dry Mango powder - 1/2 tsp.
Coriander powder - 1/2 tbsp.
Vegetable oil - 5 tbsp.
Salt to taste
Wash and dry the Lady's finger
Chop the Top portion of the vegetable and make a cut from one side of lady's finger, so the masala can be filled inside.
Take a bowl and add curd, chilli powder, Pinch of pepper powder, Coriander powder, Turmeric powder and salt.
Make a paste of this mixture and apply on top and inside the Lady's finger or bhendi as you may call.
Leave it to marinate for about 10 minutes and place a fry pan on medium flame and add 5 tbsp. of vegetable oil.
Once oil is hot carefully place the marinated lady's finger one by one in oil, Turn the vegetable to other side once it is roasted on one side.
Keep turning it till it evenly gets roasted on all sides, Once it's done remove it from the pan and place it on a plate and sprinkle 1/2 tsp, of dry mango powder.
You may serve this hot with curd rice, sambar rice , lemon rice or you can have it as a snack.
