Waalache Birdhe ( Field Beans Curry )

Waalache birdhe is a typical Chandraseniya Kayasth prabhu curry made of kadve waal that is field beans. Some other maharashtrian communities also make it by the name of "dalimbi usal" but the name "Waalache Birdhe" itself suggests that this recipe would be from a kayasthi household.

1 cup Kadve Waal soaked overnight and sprouted ( field beans )
½ tsps jeera
½ tsps mustard seeds
2-3 flakes of garlic
2 green chillies
¼ cup fresh grated coconut
1/2 cup coconut milk
2 finely chopped onions
1 tsp turmeric pwd
2 tsps chilli pwd
A pinch of asafoetida
1 tbsp tamarind pulp
Jaggery for taste
2 tbsps oil
Chopped coriander leaves for garnish
Salt to taste
De-skin the soaked and sprouted field beans (kadve waal ) and apply turmeric pwd, chillipwd, and paste made of jeera,1/4 grated coconut and garlic to it and keep aside.
Heat oil , add asafoetida and mustard seeds and let them splutter.
Then add finely chopped onions and cook until soft and transparent.
Finally add the field beans (Kadve Waal) to which the above pwd masalas and jeera- garlic –coconut paste is applied and kept and stir fry by adding little water to avoid burning.
Once cooked add tamarind pulp and salt and jaggery as per taste along with the coconut milk.
Bring to a boil and add chopped coriander leaves and serve hot with chapatti or rice.
