Zucchini Rosti (zucchini Tikkis)
Zucchini – 1
Potato – 1 (boiled and peeled)
Ghee/Oil – to shallow fry
Salt – to taste
Green Chilies – 2 (finely chopped)
Refrigerate the boiled potato until chilled. Grate the potato.
Grate the zucchini without peeling. Sprinkle little salt and keep it aside for 10-15 mins. Squeeze out the excess water with your hands.
In a bowl add grated zucchini, potato, salt, green chilies. Mix well.
Grease the palm of your hands and take bits of mixture and roll to form patties.
Shallow fry the patties until they are golden brown.
Serve with cucumber & carrot yogurt dipping.
