Carrot Barfi (gajar Ki Barfi)
Grated Carrots – 2 Cup
Grated Khoya ( Condensed Milk) – ½ Cup
Sugar – 2/3 Cup (Add or less as per your taste)
Sliced Pistachios – 10 to 12
Ghee – 2 tbsp
Green Cardamom Powder – ½ tsp
Pressure cook the grated carrots until 2 whistles.
Heat ghee in a kadhai and add the cooked carrots and saute till the mix gets dry and raw smell leaves from carrots.
Now add sugar and grated Khoya and cook till it gets little thicken. Stir continuously.
Add green cardamom powder. Mix well.
Transfer the mixture into a greased tray and flatten it equally. Garnish with the sliced pistachios.
Let it set for sometime in the refrigerator and cut into squares or diamonds.
Carrot Barfi is ready to serve.
