Shrimp Fry / Andhra Royyala Vepudu
I learned this spicy Shrimp fry from my Mom, which is a best accomplishment for rice. Preparing this recipe will be very easy like other shrimp recipes.

Ingredients:
Shrimp - 1 lb
Onion - 2, Medium
Ginger-garlic paste - 1 tsp
Coriander powder - 1 tsp
Cumin powder - 1/2 tsp
Red chilli powder - 2 tsp or to taste
Garam masala - 1 tsp or to taste
Cooking oil - 5 tbsp
Turmeric powder - 1/2 tsp
Salt to taste
Coriander leaves - 1/4 cup, chopped
Curry leaves - 1 spring
For Marination:
Ginger-garlic paste - 1 tsp
Red chilli powder - 1/2 tsp
Salt - little
Coriander powder - 1/2 tsp
Cumin powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Directions:
Peel the skin and clean the shrimp.
Marinate the cleaned shrimp with all the ingredients under marination for 20 minutes.
Make onions into coarse paste. (Don't make them into smooth paste)
Heat a pan, add the marinated shrimp and cook until they are done and all the water that oozes out from shrimp is evaporated. No need to add oil.
Dish-out the shrimp and to the same pan add oil and when oil is hot add onion paste and cook till it turn golden brown. (Cook on medium to low heat to prevent burning)
Add ginger-garlic paste and cook there is no raw smell.
Add coriander powder, cumin powder, red chilli powder, salt and garam masala and mix. Add 2 to 3 tbsp water to prevent spice powders from burning and cook for a minute.
Add cooked shrimp, coriander leaves and mix and cook for another 2 minutes.
Serve with rice.
