Chingri Diye Jhinge (ridge Gourd Prawn Curry)

I have learnt it from my Mom. It has ridge gourd and prawns as main ingredients. It is a curry recipe and is usually served with rice.

Small Size Prawn 200gm
Ridge Gourd (Jahni,Jhinga ) 250gm
Potatoes 2
Onions 2 medium sized
Tomato 1
Ginger garlic paste 4tablespoon
Kashmiri lal Mirch 2teaspoon
Red chilli powder 1teaspoon
Turmeric powder 1/2teaspoon
Coriander powder 1/2teaspoon
Cumin powder 1/2teaspoon
Mustard Seeds 2 pinch
Salt according to taste
Peel and cut the ridge gourd into cubes. Peel and cut the potatoes into cubes. Chop the tomato into small pieces. Chop the Onions into small pieces.
Wash the prawns and marinate it with pinch of haldi and salt. Heat 2 tsp Oil in a Kadhai, add 2 pinch of mustard seeds to it and let it splutter.
Add marinated prawns and let it fry till they turn light golden in color.Take it out and keep aside. Put 4 tsp Oil in the Kadai, add chopped onions and a pinch of salt to it so that onions get soft.
Add kashmiri red chilli and Red chilli Powder to it then add 4 tablespoon ginger garlic paste, haldi powder, cumin powder, coriander powder and chopped tomatoes to it. Fry them till oil starts coming from the masala.
Add the chopped ridge gourd and chopped potatoes to it, Add salt to it and mix the vegetables and masala properly and cover it for 5 minutes on low flame , so that excess amount of water comes out from the vegetables.
Add 2 cups of water and let it get cooked for 5-10 mins , then add the fried Prawns to it and cook for 5 minutes more.
Now it is ready to be served with Rice.
