Home Made Namkeen (easy Fried Snack)

My mum makes the best tea time snacks. Sharing one of her recipes for contest

Ingredients: 
Maida 2 cups
Ghee (melted) 4 tablespoon
Salt to taste
Carom seeds (ajwain) 1tsp
Vegetable oil for deep frying
water for kneading
Directions: 
Make a dough by combining maida, ghee, ajwain and salt to taste.
The dough should not be too soft like rotis it should be slightly tough
Knead the dough well
Keep aside the dough covered with wet cloth for 40 mins
Make 10 equal portions of the dough. Roll each potion on a flat surface. Use maida for dusting
Cut the dough into thin strips or diamonds. Use a sharp knife
In the meanwhile heat oil for deep frying
When hot reduce heat to low and add the strips one by one slowly.
Fry the strips till golden brown
Remove and let them cool
store in air tight containers for up to one month

You may mix a few tablespoons of rice flow in the maida for extra crispy namak para
