Kasuri Methi Pulao (dry Fenugreek Leaves Flavoured Rice)

I always prefer serving rice to my surprise guests. The reasons are first, it takes less time to cook and second you can pair them with any curry recipe. Kasuri methi is one of the easily available ingredients in North Indian Kitchen and even If you do not have it, you can buy it from any local grocery or spices selling shop and if it is kept in airtight containers, it stays for months. It has a very strong flavour and thus even ½ teaspoon of it can change the entire taste and flavour of your recipe. Here I am sharing a very quick and easy rice recipe using Kasuri Methi.

Meethi Pulao
Ingredients: 
Basmati rice – 250 grams
Onion – 1 medium sized
Green peas – ½ cup
Cashew – 4 tablespoon/ 12-15 pieces
Green cardamom – 1 piece
Cinnamon – 1 ½ inch stick
Kasuri Methi (Dry Fenugreek leaves) – ½ tablespoon
Ginger Garlic paste – 1 tablespoon
Bay leaf - 1
Salt – To taste
Oil – 4-5 tablespoon
Ghee – 2 tablespoon
Lemon juice - 1 tablespoon
Directions: 
Wash the rice and soak it in water for 30 mintues.
Heat oil in a pan and add cashew. Fry the cashew for few seconds or as soon as they start turning brown……do not burn them. Once done, take them out and keep separately.
Add bay leaf, crushed cardamom and cinnamon in the remaining oil. As soon as they start changing the colour, add sliced onions. Fry the onions on low heat, till they turn light brown.
Now add ginger garlic paste and sauté for a minute.
Then add the green peas and kasuri methi and mix. Put off the gas and close the pan with a lid.
Drain the excess water from the rice and keep it aside.
Switch on another gas and put a pressure cooker. Heat ghee and add the basmati rice. Saute the rice in ghee for a minute on medium heat.
Now pour the content of the pan….the fried onion,masala and green peas in the pressure cooker. Add salt and about 300 ml water and lemon juice. Put the lid and pressure cook up to one whistle. Let the steam escape and then serve it hot with any curry recipe of your choice.
Besides Green pea, you can add carrots, French beans, cauliflowers and even Paneer,to make it more tasty and healthy.
Footnotes: 
Avoid capsicum as it can overtake the flavor of kasuri methi.
