Meloni Sabzi (mixed Veggies Cooked With Spinach)

You may think, it is just another type of side dish wherein mixed veggies are cooked with some spices but actually it is not. It is one of the most healthy side dish recipes that I can recommend to anyone, be it elderly people, kids, any sick person and anyone who is health conscious. Meloni Sabzi
Ingredients: 
Cauliflower – 1/4 cup (Chopped)
Carrot – ¼ cup (Sliced or cut in small pieces)
French Beans – ¼ cup (Chopped)
Capsicum – 1 (Chopped)
Onion – 1 medium Sized (Chopped)
Tomato – 1 Medium Sized (Chopped)
Spinach – 1 bowl (chopped finely)
Meethi Seeds (Fenugreek seeds) – 1 teaspoon
Cumin Seeds – 1 teaspoon
Roasted Cumin Powder – 1 tablespoon
Cashew Paste – 2-3 tablespoon
Fresh Cream – ½ cup
Salt – As per your taste
Oil – 4 tablespoon
Grated cheese – 3-4 tablespoon
Directions: 
Keep a large pan with 2 cups of water on the Gas and switch it on. Let the water boil and then add chopped cauliflowers, carrots and beans in it and boil for 2 mintues. Drain the excess water and keep the veggies aside.
Heat oil in another pan and add meethi seeds followed by cumin seeds, Let them splutter and then add the chopped onions. Fry till it becomes translucent and then add the chopped tomatoes. Continue to cook on medium flame
As soon as the tomatoes are almost done, add cumin powder, chopped spinach, boiled vegetables and capsicum and mix well. Add the salt and reduce the flame to minimum. Put a lid on and cook it for 6-7 mintues. Stir in between, till the Spinach and veggies are all done.
Finally add the cashew paste, fresh cream and mix. Cook for another 1 mintue and then put off the gas. Garnish with Cheese or butter if you wish to and serve hot with Naan.
Footnotes: 
You can replace the fresh cream with equal amount of skimmed milk.
You can add more vegetables like green pea, mushrooms, corn but do not omit spinach.
