Teevan (sindhi Special Mutton Curry)
This mutton curry is a mild spicy Sindhi specialty. Its a meat lover's delight. Here is an easy recipe to make the famous 'Teevan' also known as 'Seyal Teevan'

Ingredients:
1 kg mutton cut into pieces
1 Tbsp lime juice
2 Tsp Jeera powder
1 tsp Garam Masala (preferable home made)
2 tsp Turmeric powder
2 tbsp chopped coriander
6-8 green chilies chopped
2-3 pcs each of bay leaf, whole black cardamom, Cinnamon sticks, cloves
1 Tbsp Garlic Paste
1 Tbsp Ginger Paste
4 large Onions finely chopped
4 potatoes cubed
5 Tomatoes chopped
1/2 Cup curd
Freshly ground green Cardmom powder
Salt to taste
6 Tbsp oil
Directions:
Clean chop and dry the mutton pieces. Marinate the meat using lime juice, ginger garlic pastes, salt, curd and 1 tsp turmeric powder (you may add a pinch of garam masala). Let the meat marinate for about an hour.
Add 3 tbsp oil in a deep pan, when hot add all the whole masalas - bay leaf, whole black cardamom, Cinnamon sticks, cloves give it a quick stir and then add in the marinated mutton. Sear the mutton well on all sides to fix in the juices. turn off the heat when well seared (it should take about 10 minutes)
In a pressure cooker, heat 3 tbsp oil add onions, chilies, tomatoes, Jeera powder, Turmeric powder and salt, keep stirring till tomatoes and onions become soft and leave oil from sides
no add the seared mutton into the pressure cooker, add 1 cup water, potatoes, adjust salt and finally add garam masala. Cover and pressure cook for 20 minutes.
Before serving, sprinkle freshly ground green Cardmom powder and coriander leaves.
