Kerala Style Chambakka Achar(kerala Style Love Apple Pickle)

It's a mouth-watering pickle. Love Apple is a seasonal fruit available in Kerala and is commonly used for making pickles, wines and jams. I have a love apple tree at my home and hence I used to make this pickle during every season of this fruit. It's a favourite dish of all my friends and is best when served with Kerala style rice or white rice. If you get this fruit, just try this out and you will be addicted to it.

Ingredients: 
Love Apple- 20
Vinegar- 5 tbsp
Red chilli powder- 3 tbsp
Turmeric powder- 1 tsp
Fenugreek powder-1/2 tsp
Asafoetida powder-1/4 tsp
Salt- as required
Sesame oil- 4tbsp
Mustard seeds-1/2 tsp
Dried red chillies-4
Curry leaves
Water- as required
Directions: 
Wash the love apples and cut into two pieces.
Remove the seeds and further chop the love apples into small pieces
Heat the sesame oil in a pan and add red chilli powder, turmeric powder, fenugreek powder, asafoetida and salt and sauté for few seconds.
Then add vinegar and stir well.
When vinegar gets boiled, switch off the gas and remove from flame.
Heat 3 tbsp sesame oil in another pan and add mustard seeds. When the mustards seeds splutter, add dried red chillies and curry leaves and sauté for one minute.
Now add the chopped love apple pieces and required salt and stir well until the love apples gets sautéed.
When the love apples get sautéed well, switch off the gas and remove from the flame.
When the love apples get cooled, add the vinegar mixed with chilli powder, turmeric powder, fenugreek powder, asafoetida and salt and mix well.
Transfer the pickle to air tight containers and store for 2 to 3 months

The pickle can be preserved up to 6 months if refrigerated
