Makhan Bada


Makhan Bada is a Rajasthani Diwali sweet recipe. To make makhan bada, maida's dough balls are deep fried and soaked in sugar syrup.

Makhan Bada
Ingredients: 
Maida (All purpose flour) – ½ Cup
Ghee – 1/6 Cup for dough
Ghee – to deep fry
Yogurt – 1 tbsp
Baking Powder – a pinch
Pistachios – 2 tbsp (chopped)
Green Cardamom Powder – ¼ tsp
Sugar – 1 Cup
Water – ½ Cup
Directions: 
In a bowl, add maida, 1/6 cup of ghee, baking powder and mix it with your hands. Now add yogurt and make a dough like poori dough. Don’t add water and leave it for 10-15 minutes.
Heat pan, add sugar, green cardamom powder and water and make one thread sugar syrup.
Now divide the dough in small equal portions (i.e. size of small lemon). Round them, press each ball from the center with the help of finger.
Heat ghee in a kadhai and deep fry the ball until golden brown and crisp.
Drain on an absorbent paper.
Soak badas in sugar syrup for 30 minutes. Take them out in a serving plate. Garnish with the chopped pistachios.
