Baigana Bharta (roasted Brinjal Bharta)

In Odisha roasted brinjal bharta is very popular dish and is served as complimentary dish for Lunch on a daily basis. It is simple, quick and easy to prepare recipe. Since it is roasted it requires less oil. It tastes delicious when served with rice

Baigana Bharta (Roasted Brinjal Bharta)
Brinjal (egg plant) 2pieces
Green chilli 2pieces
Onion 1piece (chopped)
Mustard oil 1-2teaspoon
Coriander leaves 1 tablespoon (chopped )
Wash and dry the brinjal.
Make a slit in the middle of brinjal with a knife. Add a drop or 2 of oil inside the slit of brinjal.
Roast on gas flame directly, cook on all sides till brinjal is soft.
Allow to cool down,now remove the charred( blackened)skin off.
Mash the brinjal, add chopped onion, chopped green chili, chopped coriander leaves, mustard oil and salt. Mix all together well.
The bharta is ready to be served with rice.
