Hagalakai Gojju (bitter Gourd Curry )

Bitter gourd is a most famous vegetable in south India, it is a good health diet too, and it lowers blood glucose in diabetics. It has been used to treat diabetes in ancient days; even today it is available in the form of tea, juice and extracts. Fresh bitter gourd is an excellent source of vitamin-C, one of the powerful natural antioxidants. Various curries are also prepared, even though it tastes bitter its taste can be sweetened by adding jaggery, it a best health diet. This dish is prepared by adding jaggery so that it taste sweet, do not peel of the skin of bitter gourd as the skin has various nutrients in it.

Ingredients: 
Bitter gourd – ¼ kg
2 hog plums (ambade) or 1 tamarind (soaked)
Jaggery – small piece (as per your requirement for taste)
Onions – 3
Turmeric – ½ tbsp
Red chili powder – 2tbsp
Salt to taste
Oil – 4tbsp
Coriander leaves
Curry leaves
1/2 teaspoon cumin
1/4 teaspoon mustard
Directions: 
Wash the bitter gourd well cut off the edges of the bitter gourd and cut them vertically and remove the seeds out and cut the gourd into pieces and transfer it into plate
Cut out onions and keep them a side
Grate the jaggery and transfer it into a small bowl
Soak the tamarind in water and then extract its juice
Add oil into the pan and heat it on medium flame
Once the oil is heated add cumin, mustard seeds and curry leaves fry them for about 1-2min
Add onions and chopped bitter gourd, stir them well
Add salt, turmeric power, chili powder and juice of tamarind along with ½ glass of water
Add the grated jaggery as per your requirement to make it sweet.
Mix up well and close the lid and cook them for about 20mins
Once the gravy is thickened your bitter gourd is ready to serve Garnish it with coriander
