Katrika Kulambu (brinjal Gravy)
Katrika Kulambu is a vegetarian curry recipe from Kerala. I learned this recipe from my mom. It is a mouthwatering recipe.We can eat this with hot rice or chapatti.

Ingredients:
Brinjal- 5 pieces (cut in medium size)
Onion- 2 pieces (sliced)
Tomato - 2 pieces (chopped)
Green chilli - 2 pieces (sliced)
Tamarind pulp- 1 Tablespoon
Sugar - 1 Tablespoon
Salt - to taste
Curry leaves - 7-8 leaves
Coconut milk - 6 Tablespoon
Oil - 4 Tablespoon
Directions:
Heat 2 tablespoons of oil in a pan. Fry brinjals till it turns to brown..
Heat remaining oil in another pan add onions, tomatoes, green chilli, turmeric powder and chilli powder. Saute for 1-2 minutes.
Then add tamarind pulp, fried brinjal, salt and sugar and cook for some time till the vegetables are done and gravy thick.
Finally add the coconut milk and garnish with curry leaves.
Footnotes:
Katrika (Brinjal) have to be fried till it becomes brown.
