Kheer (indian Rice Pudding)

Kheer is a well known Indian sweet dish or dessert. The main ingredients are rice and milk. Traditionally it is made on birthdays across India and also on festivals like Diwali, Chaat puja, Poila baishak.

Ingredients: 
Short/medium grained rice ¼ cup (soaked for 30 mintues)
Milk 4 cups
Sugar 3 tablespoon
Cardamom powder ¼ tablespoon
Nuts (almonds, raisins and cashews) 2 tablespoon
Ghee 1 tablespoon
Directions: 
In a saucepan, heat the ghee and roast the rice for 2-3 minutes in low heat.
Now add the milk. Increase the heat to medium high and let it come to a boil. Reduce the heat to medium and cook until the milk has reduced in half.
Keep stirring in between.
Check if the rice is cooked. Add cardamom Powder, nuts and sugar. Cook for another 5 mintues.
Take it out from the gas stove. Garnish it with Nuts and keep it in the refrigerator for an hour.
