Madatha Kaja

Madatha kaja is famous delicacy from East Godavari district In Andhra Pradesh. Today many Andhra sweet shops across the world sell this delicacy. Very tasty sweet liked by children.

Madatha Kaja
Ingredients: 
• Maida – ¼ kg
• Vanaspati – 50gms
• Sugar – ¼ kg
• Rice flour - 1 tablespoon
• Vegetable oil for deep frying
• Salt -1pinch
Directions: 
In a bowl add maida, 30gms vanaspati salt and mix well. Prepare the dough similar to chapatti dough by adding water. Leave it to soak for ½ hr.
Make lime size balls of dough and then roll it to thin chapatti.
Place one chapatti on a plate and apply vanaspati and sprinkle little rice flour. Now place one more chapatti and repeat the process till you have a set of 6 chapattis.
Roll the set of chapattis to a bunch.
Cut the roll across to thin strips.
Deep fry the formed kaja strips in low flame for 15mins. Remove and drain oil.
In another vessel prepare sugar syrup by adding sugar and water. The string between the fingers needs to be thin.

Remove and drain sugar syrup.Store the Madatha Kaja in dry container.
