Matar Aur Gobhi Ki Khichdi Green Pea And Cauliflower Khichdi)

It is a seasonal maincourse recipe and is usually cooked in winter due to availability of fresh peas and cauliflower. It is a traditional recipe of Uttarpradesh wherein different vegetables and seasonal spices are mixed along with rice to make it a wholesome recipe.

Ingredients: 
Rice 150 grams (5.5 ounce)
Hare matar (green peas) 50 grams (2 ounce)
Gobhi (Cauliflower) 1 cup (washed and drained)
Potatoes 4 pieces (quatered)
Coriander leaves 25 grams (1 ounce)
Garlic 5-6 cloves (one can use green garlic if available)
Green chillies 2 pieces
Onion 1 onion
Bay leaf 1 piece
Ginger ½ inch
Cumin seeds ½ tablespoon
Black pepper ¼ tablespoon
Gotta garam masala (2 cloves, 2 cardamom and ½ inch cinnamon)
Salt 1/2 tablespoon
Mustard oil 6 tablespoon
Ghee 2 tablespoon
Directions: 
Wash and drain the rice.
Grind onion,cumin seeds, black pepper, ginger, gotta garam masala, green garlic, green chillies and coriander leaves into a smooth paste.
Then take half of the peas and grind it into paste and keep it aside.
In a karahi heat oil and fry the gobhi till they turn golden brown. Take them out and fry the potatoes likewise. Once potatoes are done take them out and keep separately.
In the remaining oil put bay leaf and let it pop. Then pour the masala paste and fry till the masala releases oil. This will take about 5 mintue. Then add the green pea paste and fry for 2 more mintues. Then add gobhi, poatatoes, remaining green pea and rice and mix them all.
To make khichdi, pour the entire thing in a pressure cooker along with salt and 150 grams of water. Cook up to 1 whistle. Check if the rice and potatoes have become tender.
Heat ghee in a small pan and temper the khichdi. Serve hot with papad.
