Gajapriya's Secret Indian Recipe !

Veggies-1 cup (I used carrot, beans, capsicum, cauliflower, babycorn)
Onion-1 big chopped
Tomato-2 medium sized chopped
Crushed Ginger & garlic -1 tsp
Green chilly-1 chopped finely
Chilli powder-1 tsp
Coriander powder-1 tsp
Cashews-10 no.
Khus khus ( Poppy seeds)-1 tsp
Jeera ( cumin)-1/2 tsp
Curry leaves-few
Coriander leaves-as.needed
Salt-to taste
Oil-2 tbsp
Ghee-1 tsp
First cook veggies in pressure cooker with required water & salt. After veggies has been cooked keep aside.
In a pan add 1/2 tbsp of oil. add Poppy seeds & cashews saute till reaches golden colour (don't allow to burn) then add crushed ginger & garlic, onions and tomato saute till it gets mushy then add chilli powder & coriander powder saute till raw smell goes away.
Allow to cool for a minutes.Then grind it as a fine paste.Take a non-stick kadai add remaining oil + ghee after heated add jeera allow it splutter& add.curry leaves.
Now add grounded masala, required salt saute for 10 to 15 mins on a low flame till the oil comes out on sides of the kadai.In the meanwhile heat 1 cup of water in other side.
Then add cooked veggies + hot water mix it well check salt & finally add some coriander leaves switch off.Serve hot ..
You can add any vegetables as per your choice.
You can add fresh cream for more richness. Instead of adding hot water can add milk for more taste.
